“Cook Like It’s 1943” Week – Day Two

Thursday, Sept. 23, 1943

Sept. 23, 1943 p.21Tonight’s dinner will again feature corn on the cob as a side dish. Why? Because it’s in season! Once upon a time, you only ate corn when it was in season because that was the only time it was available because it had to come from local farms. You’re also going to serve creamed potatoes, and a carrot and raisin salad. The main dish is braised beef liver with onions. A pound of beef liver is 6 red points bit it’s good protein. And for real thrift, here’s a prize-winning recipe for baked frankfurters and spaghetti. Yes, all this takes time in the kitchen. Yet William Spencer of the War Manpower (!) Commission has announced that women are essential to prevent a labor shortage crisis. How many hats can a woman wear?
